Vanilla at Killarney Park Hotel

We’ve been warned about a looming vanilla shortage for a while now. The shortage and increased prices of vanilla are down to poor harvests earlier this year in Madagascar, caused by the Enwao cyclone back in March. That’s an issue, because Madagascar is where 80% of the world’s vanilla pods come from. Hence the global shortage.

We are happy to announce that we are managing well our supply of Vanilla this winter in house at Killarney Park Hotel. Here’s some of the Vanilla in store from Heiko and our Kitchen Team:

Getting a lot like Christmas

Our Kitchen Team are busy preparing Christmas Puddings and Festive breads for the busy and tempting Festive Season 2017.

Head Chef Heiko, being German, knows the intrinsic link between the Christmas season and hearty dining and his Festive Fare includes some of his Germanic traditions such as the delicious Stollen Bread – Stollen is a fruit bread containing dried fruit and often covered with powdered sugar or icing sugar. The bread is usually made with chopped candied fruit and/or dried fruit, nuts and spices.

We pride ourselves on using locally sourced produce in the Garden Bar and Park Restaurant, and in our blog this week we feature Cordal Goats Cheese, which is produced just a few miles over the road in Firies in Mid-Kerry.

Served with Hot Smoked Salmon as a Starter in The Park Restaurant Autumn Menu, it is a delicious complement to any dish.
